Mustard Chicken & Greens

Ingredients:
  • ¼ cup of whole-grain mustard (with no starches –check the label!)
  • 8 oz skinless, boneless chicken breast, halved
  • 1 bunch of greens
  • Sea salt and black pepper (seasoned to taste)
Directions:
Coat the chicken in the mustard. Let marinate for 1 hour in the refrigerator. Preheat boiler. Remove chicken from dish, place in broiler pan and cook thoroughly, 6 minutes on each side. Steam the greens until soft. Divide evenly and top each serving with chicken. Season with salt & pepper to taste.
