Roasted Tenderloin

Ingredients:
  • 1 ½ teaspoons chili powder
  • 1 teaspoon pounded cumin
  • ½ teaspoon sea salt
  • ½ teaspoon dried oregano
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon celery seeds
  • 8 ounces of tenderloin
  • 1 tablespoon fresh squeezed lemon
Directions:
Combine first 7 ingredients in a small bowl. Place meat in a dish and drizzle lemon juice. Rub mixture on roast. Cover & refrigerate for 1 hour and preheat oven to 350 degrees. Let beef stand at room temperature for 15 minutes, Place in small non-stick roasting pan 30-40 to desired doneness. Remove from the oven and let stand for 20 minutes before serving.
