Blackened Fish

Ingredients:

  • ¼ cup fresh squeezed lemon juice
  • 2 tablespoons dried thyme
  • 2 tablespoons dried basil
  • ¼ teaspoon black pepper
  • ½ teaspoon dried crushed red pepper
  • 1 teaspoon sea salt
  • Chopped parsley
  • Lemon wedges
  • 8 ounces of halibut, flounder or sole – skinned & halved 

Directions:
Place first 6 ingredients in saucepan over low heat, cook for 10 minutes. Place fillet in shallow baking dish and pour mixture over top. Cover & chill for at least 1 hour. Add fillets in hot grill pan, cook 2 minutes on each side. Garnish with lemon wedges and parsley.
