Cedar Halibut Fillet

Ingredients:

  • Cedar grilling plank
  • 5 tablespoons apple cider vinegar
  • Juice from 1 lemon
  • 1 teaspoon fennel seeds
  • 8 ounces of halibut, flounder or sole – skinned & halved
  • ¼ teaspoon sea salt ¼ teaspoon black pepper 

Directions:
Soak grilling plank overnight. Combine the first 3 ingredients in a plastic freezer bag. Add fillet, seal and refrigerate for 3 hours. Preheat grill to medium-high, pour marinade in a small saucepan, bring to boil and reduce liquid to 3 tablespoons. Dry the plank, place fish on it and grill for 15 minutes. Remove from grill, baste with remaining marinade.
