Fish Fillet Veracruz

Ingredients:

  • 1 tablespoon red pepper flakes
  • 10 halved cherry tomatoes
  • 2 chopped green onions
  • 4 ounces of halibut, flounder or sole
  • 3 tablespoons fresh squeezed lemon juice
  • 1 minced garlic clove
  • 1 teaspoon paprika
  • Sea salt & black pepper seasoned to taste

Directions:
Preheat to 400 degrees, mix juice, garlic and paprika. Place fillet in baking dish, cover with lemon mix. Sprinkle flakes, tomatoes & onions over fish, season with salt & pepper, cover with foil, bake for 15 minutes.
