Chicken Tomato Creole Salad

Ingredients:
  • 5 cups water
  • 8 ounces of halved skinless, boneless chicken
  • 2 Creole tomatoes (or 4 Roma tomatoes)
  • ½ cup chopped fresh basil
  • 1 tablespoon apple cider vinegar
  • 1 minced garlic clove
  • ½ cup basil seasoned blend
  • Sea salt & black pepper, seasoned to taste
Directions:
Add chicken to boiling water in medium saucepan, cover, reduce to simmer for 20 minutes. Set chicken aside and allow to cool. Then chop and add to a large bowl. Stir in basil, then remaining ingredients. Refrigerate at least 2 hours. Prior to serving, cut tomatoes into ¼” slice and add to plate, along with chicken Creole mixture.
