Chicken Tomato Creole Salad

Ingredients:
Add chicken to boiling water in medium saucepan, cover, reduce to simmer for 20 minutes. Set chicken aside and allow to cool. Then chop and add to a large bowl. Stir in basil, then remaining ingredients. Refrigerate at least 2 hours. Prior to serving, cut tomatoes into ¼” slice and add to plate, along with chicken Creole mixture.
- 5 cups water
- 8 ounces of halved skinless, boneless chicken
- 2 Creole tomatoes (or 4 Roma tomatoes)
- ½ cup chopped fresh basil
- 1 tablespoon apple cider vinegar
- 1 minced garlic clove
- ½ cup basil seasoned blend
- Sea salt & black pepper, seasoned to taste
