Chicken with Leek Topping
Ingredients:
Preheat oven to 375 degrees. Cut leeks into thin strips. Cut two 6” circles of parchment, fold in half, open the circles, place chicken in each half and coat with mustard. Top with leeks and seasonings. Fold & seal paper. Place on baking sheet until thoroughly baked.
- Parchment cooking paper
- 2 leeks, green tips removed
- 8 ounces of halved skinless, boneless chicken breast
- 4 teaspoons fresh thyme
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- 4 teaspoons whole grain mustard with no starches (check the label!)
