Basil Shrimp Packets

Ingredients:
  • 1 regular-sized foil oven bag
  • ½ cup diced tomato
  • ¼ cup sliced green onions
  • ½ teaspoon grated lemon zest
  • 1 tablespoon fresh squeezed lemon juice
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 8 ounces of peeled & deveined large shrimp
  • ¼ cup chopped fresh basil
Directions:
Pre-heat oven to 400 degrees, place oven bag on shallow baking pan. Place all the 8 ingredients in a bowl and toss thoroughly before adding them to foil bag. Fold to seal securely and bake 10-15 or until the shrimp is completely cooked. Cut open foil with steel knife and peel back. Do so carefully, as contents of the bag will be hot.
